    Been thinking about fish tacos lately so I picked up cod and shrimp from Fresh Farms and rolled my own.

    Fish Tacos

    Cod/shrimp
    Peel and devein shrimp/cut cod in taco size pieces
    Light brine 2-hours
    Rinse, pat dry

    Batter
    1-1/2 cup flour
    12-oz beer
    salt/pepper/cayenne/cumin
    Mix with beer, let rest 20-minutes

    Fry
    Corn oil in wok

    Image

    Drain/rest
    Image

    Slaw
    Cabbage dressed with labne/Hellman's/lemon juice/salt/pepper/cayenne/cumin

    Salsa
    Tomato/jalapeno/white onion/cilantro/lime/salt/pepper

    Image

    Plate, eat, enjoy.

    Looks great, Gary. Dumb question I imagine but what made up your "simple brine"? Salt, sugar and water?

    I'll be at the beach in a couple of weeks and have great access to fresh fish and shrimp (not so sure about tortillas, though, even the packaged variety) and this would make a nice simple meal.

    Simple brine in this case was simply kosher salt and water. A bit of sugar, along with salt and water, would still qualify as simple brine in most cases.

    they look fantastic, I too have a question, maybe more of the dumb variety . . . why would you brine fresh fish and shrimp? does a salt bath make the flesh more tender/juicy?

    That does it! I will have fish tacos tonight!

    I walked (2 miles) up to Old Oak Tap on Sunday afternoon because I had an intense craving for fish tacos. I was so joyful thinking I was getting in a great walk to and from and it would be all worth it when I got my tacos, the sun was shining, the breeze was blowing......

    Brunch menu only until 3:00!!!!!! :evil:

    I was one disappointed non eating fish tacos woman.
