I have some frozen huitlacoche, more than I need, so I am selling it by the pound if anyone wants some.
I used it recently in a pasta dish with zucchini and sweet corn, and also to make a huitlacoche-blueberry ice cream. Delicious.
This product is from Florida and is quick frozen to retain its texture and appearance. The fungus kernals are all uniform size and shape which is more appealing when using whole.
Price is $12 per pound, which is what I paid with shipping. Not looking to make a buck on this, just want to get rid of the extra stuff I have.
If you've never had huitlacoche, it's a corn fungus, very earthy and rich. Very good in quesadillas, with bean soup, sauteed with veggies and pasta, and of course makes a very interesting ice cream. You can find that recipe and others here:
