I have some frozen huitlacoche, more than I need, so I am selling it by the pound if anyone wants some.

I used it recently in a pasta dish with zucchini and sweet corn, and also to make a huitlacoche-blueberry ice cream. Delicious.
This product is from Florida and is quick frozen to retain its texture and appearance. The fungus kernals are all uniform size and shape which is more appealing when using whole.

Price is $12 per pound, which is what I paid with shipping. Not looking to make a buck on this, just want to get rid of the extra stuff I have.

If you've never had huitlacoche, it's a corn fungus, very earthy and rich. Very good in quesadillas, with bean soup, sauteed with veggies and pasta, and of course makes a very interesting ice cream. You can find that recipe and others here: http://www.sweetcorn.illinois.edu/Common-smut/Recipes.htm

If you're interested, please email efrain@chefrain.com. My kitchen is located in Lincoln Park and I can set up a time with you for pickup.

Thanks for the interest and happy cookin!

    Hi,

I don't need it, because I have some in my freezer. I will advise your price is reasonable. It is somewhat less than what I paid, though I ordered a small quantity. I do appreciate the link to the recipes.

    Thanks!

    Regards,

Yes, i got a pretty good price (I bought 10 pounds). I'm hoping to get some fresh huitlacoche in September from Tracy from 3 sisters. I will most likely throw another dinner party when i get my hands on that.
You should check out my menu from the Huitlacoche dinner party: http://www.clandestinodining.org/2009/0 ... iac-supper

It was an aphrodisiac menu. We even had a make out room in the back, but sadly, no one took advantage =(

My father has a farm in Indiana and has huitlacoche coming out his ears (quite literally). I can let him know if you're interested. Apparently, there isn't much of a market in rural Indiana for "corn smut" as they call it.
