    It's listed as an ingredient in Pizza Chena/Pizza Gaina recipe I'm using.

    I know I can substitute ricotta, but if I can get this cheese I would prefer to go that route instead.

    I called J.P. Graziano's & the woman I spoke to said she never heard of it.

    Any ideas?

    Try asking for formagetto. Graziano's may not have it, but that's what it would be called if they did.

    also... if you can't find it, I think the "farmers cheese" sold under various Amish labels, and available at Rise n Roll in the loop, would be a better sub than ricotta

    Thanks. J. P. Graziano's expected my 2nd call today. They didn't have it, but he's already looking around for it. Once again, an anticipatory resource well-deserving of the GNR.

    Will try Rise & Roll tomorrow.

    Have you heard the cheese refered to as Tuma? It is a fresh basket cheese that many people use for the Pizza Chena or Easter Pizza. Graziano's carries it during Easter time, probably expecting it Monday 3/22

    Thanks just realized it's probably you (J.P. Graziano's). I need the cheese for Sunday. But now we know what to ask for and when it's available. I just called the shop.
