Last night, we had baked chicken thighs that had been marinated in the Walkerswood Jerk Marinade (as discussed in this thread.) Steamed up some cauliflower, and drizzled it with some butter, salt and pepper. A simple, delicious dinner.

    Chicken and pork adobe
    basmati rice
french cut greenbeans, wee bit of butter, sea salt and ground pepper

We have made adobe a few times and have experimented with different cuts of pork. We have always used skin on chicken thighs (not changing that up) but the first time we used pork loin and cubed it into large pcs. The result was not what we wanted, a little dry actually. The second time we tried country ribs...closer but not exactly what we wanted either. Last night we used pork necks...and think we have it. Pork necks and bone-in chicken thighs is the way to go. What even made me happier is that for approx $8 of meat for a really large pot of adobe, results in 2 family meals. Awesome.

Last night was chicken marsala, turned out really good!
Tonight we're goin' comfort food since it's getting nippy - meatloaf, oven roasted new potatos, fresh green beans with butter and I'm considering baking some no-knead bread (depends on how the day goes)

    Roasted home-grown fingerling taters
'Dancing Bull' Sauvignon Blanc - it's in the pan sauce, too, along with more herbs

mmmmmmmmmmmmm! Easy dinner for a busy, busy Sunday - even with no farmers markets to cover. :(

Weather conditions definitely influence me re; meal planning.

Tomorrow: grilled fajitas, rajas, pico de gallo with tomatoes from the Lincoln Square market/my own newly-harvested red jalapenos. Tuesday: grilled chicken w/chimichurri of home-grown herbs. Wednesday: lamb curry wraps w/raita, chiles. Thursday: grilled chicken in a giardinera marinade. Friday, when it's going to be cold & crappy again: pork loin, braised in Seedlings cider, w/cippolini onions. Should be a tasty week. :D

It's not any big deal - I did my primary shopping for the week Saturday, and planned the week today, based on 1) what I found that looked good/appealed price-wise, and 2) what I had on hand (like the cippolini onions that will braise with the pork on Friday, as well as the pork loin, which will come out of the freezer Wednesday). I don't have a lot of time to shop diuring the week, either, so planning and weekend prep -even for future grilling - is key.

Can't wait til tomorrow. Or Thursday, for that matter. Or Friday! :D

    Pumpkin Stuffed With Everything Good
    (from last Friday's NPR show)

    This recipe suggests a 3-pound pumpkin. I found I had a 9-pound pumpkin.

I split it in half horizontally, then made this recipe twice over a few days: once with rice and another time with dried bread. Rather than slicing into wedges, I used a spoon to scoop the interior pumpkin flesh to integrate with the filling.

This is definitely a keeper recipe.

    Regards,
    Cathy2
