    I have perfected my red sauce recipe, but haven't found a great meatball to go with it. Anyone have a classic family recipe or a perfected personal version?

    I'm not going to be making meatballs for a few more months and don't use a fixed recipe but mine always included ground veal, pork and pancetta, bread crumbs, ricotta, egg yolks, a splash of milk and lots flat leaf parsley. Loosely form balls, refrigerate to firm up, brown in olive oil and finish in red sauce.

    I use the 1 method. One lb of ground pork, one pound of ground beef (or veal), one egg per pound of meat, one cup seasoned bread crumbs (mix with water til moist), one cup of parmesan, one med onion, garlic,chopped parsley and salt and pepper to taste, mix and roll with hands. I think frying tastes better because I like the crispy edges, but I find myself rolling them into balls and baking so I can do a bunch at a time, and then finishing in the fry pan. Then add to sauce.
