I didn't use these at NRA. Maybe you saw the "lobster chips" I used for my "Rangoon"? Those I bought at Richwell in Chinatown.
FYI when I need custom items for show tastings it just takes a lot of calling around, then getting samples done first. You may consider buying them then just steaming them in stacked baskets on induction, or microwaving. Momofuku uses Peking Food baos:
