    Hi all,

    I hope one of you might have an answer for me, because I can't seem to find it online. I am looking for a bakery to make me large amounts of gua bao, the bao "taco" steamed bread (picture attached). I am in need of 1200/day small 2inch bao for 3 days(3600 total) for a trade show booth I am working in July downtown Chicago. I would love to have them delivered fresh everyday. Anyone know any bakeries in the are that make these? I have already asked Chiu Quon, who I know does other steamed bao, but not these types.

    You may want to try getting in touch with Louisa Chu--I could swear that I saw a pic on line of her demo'ing something (working, not reporting) with a Bao-type bun at NRA last month...

    Do you think someplace like Wow Bao would work with you? Maybe they have a source. I know I've had them from Yum Dum food truck.

    I didn't use these at NRA. Maybe you saw the "lobster chips" I used for my "Rangoon"? Those I bought at Richwell in Chinatown.

    FYI when I need custom items for show tastings it just takes a lot of calling around, then getting samples done first. You may consider buying them then just steaming them in stacked baskets on induction, or microwaving. Momofuku uses Peking Food baos:

    Hi,

    You may want to contact Kelly Chang at Sun Wah BBQ. This style of bun is used with their Peking duck, though larger than you wish. She may be sourcing them locally, though a brain tickle suggests they were imported.

    If they are made locally, I hope you will report back.
