three different heritage birds the same way: Bourbon Red turkeys, Rouen
ducks and the American Buff goose. All Heritage Poultry raised by Caveny
Farm was determined by the American Livestock Breeds Conservancy to be at
risk of being lost.
These birds can top three-figure prices when you see them in grocery
stores. But John is making them available at a very reasonable price only
a little higher than a grocery store bird. It's well worth the extra money
for a naturally, humanely-raised bird that has the same kind of depth of
flavor as a high quality beef or lamb roast.

It is Indian Summer here at our farm. We had a killing frost early last week
followed by warm days in the 70s. Raising rare breeds of fowl is like
growing grapes for fine wine -- we are dependent on the weather for the
quality of the crop. I am pleased to tell you the quality of the turkeys is

The life cycle of our Bourbon Red Turkeys follows nature's cycle. Eggs hatch
in early April, poults grow during the summer on pasture with supplemental
high protein feed and the birds mature on pasture and corn in the fall. This
process produces only one crop per year; harvest coincides with Thanksgiving
and Christmas. We count on warm -- not hot - days and cool nights in
September and October to encourage turkeys to naturally eat more in
anticipation of winter. I believe the hot days and warm nights in September
and early October are responsible for the variation in size this year.
We sold out of ducks last week and thank all who ordered. We still have

Lincoln Park Zoo and at the Evanston Farmers Market at the Church on
