This was forwarded to me as a source for getting locally raised, farm turkeys (vs. store bought stuff...).... I have no affiliation with this company, but the guy who forwarded it sells some fantastic cheeses (Giles)...

    Subject: turkey time
If all you know is modern industrially-raised turkey, this is your year to
taste what turkey really tastes like. There's simply no comparison between
an assembly line turkey and the deep and succulent true turkey flavor of a
heritage bird raised the old-fashioned, natural way.

John Caveny, a Monticello, Illinois producer of heritage turkeys, will be
offering heritage breed Bourbon Reds (both smaller hens and larger Toms)
at a special pre-order price for pickup at three of Chicago's farmer's
markets the weekend before Thanksgiving. And for Christmas he's offering
three different heritage birds the same way: Bourbon Red turkeys, Rouen
ducks and the American Buff goose. All Heritage Poultry raised by Caveny
Farm was determined by the American Livestock Breeds Conservancy to be at
    risk of being lost.

These birds can top three-figure prices when you see them in grocery
stores. But John is making them available at a very reasonable price only
a little higher than a grocery store bird. It's well worth the extra money
for a naturally, humanely-raised bird that has the same kind of depth of
flavor as a high quality beef or lamb roast.

    A NOTE FROM JOHN:
    Greetings from Caveny Farm!

It is Indian Summer here at our farm. We had a killing frost early last week
followed by warm days in the 70s. Raising rare breeds of fowl is like
growing grapes for fine wine -- we are dependent on the weather for the
quality of the crop. I am pleased to tell you the quality of the turkeys is
good and we have more sizes this year to choose from. When you visit
www.chicagocooks.com < http://www.chicagocooks.com> to place your order, you
will note sizes ranging from 6 to 18 pounds.

The life cycle of our Bourbon Red Turkeys follows nature's cycle. Eggs hatch
in early April, poults grow during the summer on pasture with supplemental
high protein feed and the birds mature on pasture and corn in the fall. This
process produces only one crop per year; harvest coincides with Thanksgiving
and Christmas. We count on warm -- not hot - days and cool nights in
September and October to encourage turkeys to naturally eat more in
anticipation of winter. I believe the hot days and warm nights in September
and early October are responsible for the variation in size this year.

We sold out of ducks last week and thank all who ordered. We still have
turkeys for sale and the pace of sales is brisk. Please visit
    www.chicagocooks.com <http://www.chicagocooks.com> for availability, plus
recipes and cooking tips. For additional reading, please see Janine

Thanksgiving pickup is Nov. 19 at the Green City Holiday Market in the
Lincoln Park Zoo and at the Evanston Farmers Market at the Church on
Sherman. Pick up at Geneva, IL is Sunday, Nov 20. If you haven't already
done so, remember to drop us an e-mail letting us know where you want to
    pick up your turkey.

I just checked this website and found no mention of ordering Rouen
ducks as mentioned in the OP. That's too bad. The ducks are something that would be right up my alley. If anyone comes across any reference to them (or even another source for heritage ducks), I would be quite interested.

    Steve and dddane,

John Caveny has been mentioned on LTHForum a couple of times in the last few days. I have a couple of his turkeys on order and he does, in fact, have Rouen ducks as well as the Bourbon Red Turkeys and American Buff Geese.

Ordering information is available through the Purple Asparagus web site.

I smoked a few of Caveny's Bourbon Reds last year and they were terrific!

    Steve,

Sorry, I gave you bad info. I just checked and Caveny is out of Rouen ducks for the time being. They are also out of the 14-18 lb turkeys, but have the other turkey sizes available as well as the American Buff Geese.

    Enjoy,
    Gary
