You've never heard of Fairgrounds Coffee & Tea. Michael Schultz is about to change that. A partner at Goddess & the Baker and founder of a coffee company that provides barista services to workplaces, Schultz plans to open the first of what he hopes will be dozens—perhaps hundreds—of coffee shops under that banner across the country. The chain will debut at the end of this month on a busy stretch of Milwaukee Avenue in Chicago's Bucktown neighborhood, near the intersection of North and Damen avenues, and then open its second store as soon as a month later in the lobby of the Chicago Athletic Association hotel along Millennium Park.

A husband-and-wife team is opening what they say is the nation's first certified organic drive-thru restaurant. Nic's Organic Fast Food is set to open next month in Rolling Meadows. The 2,700-square-foot restaurant on Plum Grove Drive will offer drive-thru and indoor dining service.
