    I was at the Sun View market in Niles the other day, and the butchers had obviously just cut up a goat. Among the cuts available was a slab of ribs. I almost bought them, but I chickened out. Has anyone ever cooked goat ribs? What are they like, and how should they be prepared? Can they be smoked, or are they too lean for that?

    I have in the method mentioned here

    though I prefer lamb breast for this prep, goat ribs turn out well too

    Two weekends ago, my neighbors bought half a goat from Prodouce world on Lawarence Av.. Various cuts were distributed and cooked in different ways We did the ribs in a Cookshack Smokette smoker after a liberal application of a paprika and ancho chile rub. Along with the shanks (which were stewed with potatoes in a pressure cooker) these were the stars of the night. Althought he taste was similar to lamb ribs, these were much leaner . I love lamb riblets marinated in olive oil and lemon and grilled over lump charcoal and wood chips. Goat ribs treated like this don't come out as well.

    Thanks, now that I have two ways of cooking them, I won't be so chicken the next time I see them. So braising is good, smoking is good, grilling is not so good. I can't wait to spring smoked goat ribs on my friends.

    Other than English style curries, I have never really cooked Indian or Kashmiri dishes. It will be fun to try Zim's recipe (when the weather cools off a bit). I would like to try it with lamb breast also. I always see lamb breast in the store, but I tend to stick with legs and shanks, since that is what I know.
