Thanks, now that I have two ways of cooking them, I won't be so chicken the next time I see them. So braising is good, smoking is good, grilling is not so good. I can't wait to spring smoked goat ribs on my friends.
Other than English style curries, I have never really cooked Indian or Kashmiri dishes. It will be fun to try Zim's recipe (when the weather cools off a bit). I would like to try it with lamb breast also. I always see lamb breast in the store, but I tend to stick with legs and shanks, since that is what I know.
