Coconut Milk Jelly
7 grams of White agar agar strands (found in asian markets)
6 cups water
3 pods cardamom, bruised
1 small stick cinnamon
2.5 cups palm sugar
2 cups thick coconut milk
Pinch of salt
1. Soak agar agar strands in cold water overnight, then drain.
2. When drained, the strands should measure approximately 1.5 cups loosely packed.
3. Place the agar agar strands into a saucepan with the 6 cups of water, cardamom and cinnamon.
4. Bring the mixture to a boil and simmer it gently for about 30 minutes or until the agar agar strands are dissolved completely. Stir occassionally.
5. Add the sugar stir until dissolved.
6. Add the coconut milk and salt, stirring constantly while bringing the mixture to a simmering point.
7. Remove from heat and strain mixture through a fine nylon sieve.
8. Pour mixture into a wet mold and cool to room temperature.
9. Chill mold until serving time.
10. To serve, remove from mold, cut into cubes and place in dish.
