While I've occasionally seen festive table side presentations of sushi served in wooden boats, and there is a currently operating Japanese restaurant in Mt. Prospect, Kampai, that floats sushi past customers in boats, I've never seen floating dim sum. Rolling carts, sure, but never floating past the customer in boats.
There was also a short lived offshoot of the Benihana chain called Sushi Doraku on State St. Mediocre, at best, sushi swung around on conveyor belts.
